Looking at the video, and seeing the physics of it, the outer edges pass over the steel faster than the inner. The smaller knife isn’t getting the benefit of even sharpening as it would if passed over a stone or wheel.

When a disc is used for abrasion, either the work is passed evenly over it or the disc is passed evenly over the work.

Also in the video, the longer knives visibly flex, thus changing their sharpening angles.

They shouldn't flex as the way the drum rolls is linear (unlike if it was a cone) so what you observed is more likely to be a consequence of lens/field of view.
Also, while you are correct that the outer edge passes faster than the inner, the bulk of the edge is exposed to most of the whole radius if you adjusted the height of the rolling surface to the width of your blade.

That said it may not give the same edge as the type of a Longstrider can give, but it requires a lot less technique and faff.
